Veegan Burger & Chips

We all need some comfort food sometimes!

A Mexican style Bean Burger with Sweet Potato Chilli Chips, Salad and Guacamole!

What you need:

1 Large sweet potato.

2 Tbl of olive oil

1 Tbl chilli oil (optinal)

(Cut the sweet potatoes to chip size and mix in a bowl with the above ingritiens + salt and pepper. Place on a tray and cook in the oven at 200C for 25 mins. Give it a shake and place in the oven for another 25 mins.) avg: £0.45

1 Avocado

1 Tomato

Coriander

Salt & Pepper

Dash of lime

(To make the chunky guacamole cut the tomato into squares place all above ingredients into a small bowl and squish with a fork.) Avg: £1.25

1 Mexican style bean burger (Whole Foods)

2 Slices of vegan cheese (Vio)

1 Whole grain bread roll

(I didn’t have time to make homemade bean burgers but I highly reccomend Whole Foods for some of the best meat alternatives. It was all delicious and 100% cruelty free!)
